From the miller of the Sierra de Cazorla. Jaime Hinojosa.

Oleosur was born as a project that is the result of more than 4 generations dedicated to the cultivation of olive trees in the province of Jaén, Andalusia, Spain. The times in which our ancestors cultivated the olive tree date back to the early twentieth century, accumulating already a hundred years of experience in this field. This knowledge has been transmitted from generation to generation, and we have the intention and the firm conviction that this will last over time through our children and grandchildren. Our ultimate goal is to transmit and preserve the love towards a way of life focused on the olive tree, which, combined with a deep respect for the environment, creates the best stage to obtain an EVOO of extraordinary quality.

This project was led by Jaime Hinojosa Pérez, who, after a long period of academic training in business management and olive growing, decided approximately 5 years ago to complete the production cycle of EVOO, combining the knowledge acquired throughout his life and the experiences received from his ancestors.

On the one hand we have the estates of our parents, grandparents and other ancestors ("Los Aguileras", "Los Centenos", "La Matancilla") located in a mountainous area located in the northern part of the Loja region. Between the towns of Alcalá La Real (Jaén), Montefrío (Granada) and Priego de Córdoba (Córdoba). An area with a significant historical significance, since it was in the last periods of the Kingdom of Granada, a border area with the Christian kingdoms. It is therefore a narrow zone, difficult to mechanize, where the traditional methods used in the cultivation of the olive grove still last, as if the time had stopped there many years ago. In our farms, you can see a mountain in the background, called "Sierra Parapanda", always omnipresent, located in the municipality of Illora. A mountain that is part of the Subbética Mountain Range and that is the natural barrier of the cold winds of the south coming from Sierra Nevada. On this mountain a lot has been written, and the ancients of the place give origin to its name under the expression that used to be used when there were clouds in its summit: "For bread it will give" in relation to the possible rains that these clouds could leave in the region. In this sense, we wanted to pay tribute using his name in one of our brands ("Luz de Parapanda"). That together with the word "light" evokes us to a place where they have pampered and cared for these centenary plants that have "illuminated" this part of Andalusia. Despite the economic difficulties derived from levels of industrialization nonexistent, the olive tree has given its inhabitants the possibility of maintaining a lifestyle "that looks at the countryside" and, in turn, has given economic prosperity and ultimately dignity to their habitants.

On the other hand, in the heart of the natural park and biosphere reserve (Sierra de Cazorla, Segura and Las Villas) is our farm called "The Hall". In this natural park, one of the richest in fauna and flora of all Europe, the Guadalquivir river is born, one of the most important rivers in Spain. It is in this privileged scenario where our farm is located, that it was conceived from its beginnings for a more efficient and modern management. It has young olive trees, of the Picual variety, which we pamper and care for as if they were our own children, doing agricultural work always with the utmost respect for the environment and with the aim of obtaining their best response from them ( the best fruit). We harvest the olives during the months of October and November, in order to obtain an extra virgin olive oil with a great intense fruity aroma, which transfers to the nose some characteristic notes of freshly cut grass.

To finish, we would like to say goodbye remembering the memory of our ancestors (Pérez, Hinojosa, Durán, Nieto and Centeno), because without their contributions, this vital project would never have materialized.

This unfiltered oil is fruity with hints of banana and tomato and a peppery, bitter finish because of the early harvesting of the picual olives.
